Responding to rapid inflation in food costs and attempting to preserve the extra bounty of local War Gardens in World War 1, elite women in Montgomery's women’s clubs established and operated a canning factory in 1917 and 1918. This presentation examines how they conceived the factory, built it, and ran it with volunteers for two seasons. It also discusses what they did with the thousands of leftover cans of vegetables that they had not sold directly to the public before the war ended.
